Apple Crisp

1-Apple Crisp

Makes 6 servings

Ingredients

6 cups apples, peeled and thinly sliced

3/ 4 cup quick cooking oats, uncooked

3/ 4 cup light brown sugar

1/ 2 cup all purpose flour

1/ 4 tsp. ground cinnamon

1/ 2 cup unsalted butter, chilled

Directions

Preheat the oven to 350 °. Spray an 8″ square pan with non stick cooking spray. Place the apples in the baking pan.

In a mixing bowl, add the oats, brown sugar, all purpose flour and cinnamon. Stir until well combined. Add the butter and cut the butter into the dry ingredients using a fork or your fingers. I find using your fingers is the easiest way. Work the butter until you have a crumb mixture. Sprinkle the crumb mixture over the apples. Bake for 35-40 minutes or until the apples are tender and the crumb topping golden brown.

Remove the crisp from the oven and cool for 10 minutes before serving.

2-Apple Raisin Crisp

Makes 6 servings

Ingredients

4 cups apples, sliced and quartered

1/ 2 cup raisins

3/ 4 cup light brown sugar

1 tsp. ground cinnamon

1/ 8 tsp. salt

1/ 2 cup unsalted butter

4 cups dry bread cubes

1/ 2 cup water

Directions

Preheat the oven to 375 °. In a mixing bowl, add the apples, raisins, brown sugar, cinnamon and salt. Toss to coat the apples with the dry ingredients. In a 8 cup baking dish, add the butter. Place the butter in the oven until melted.

When the butter melts, add the bread cubes. Toss to coat the bread in the butter. Add the apples and stir until well combined. Sprinkle the water over the top of the crisp. Cover the dish with a lid or aluminum foil and bake for 20 minutes. Remove the lid or foil and bake for 15-25 minutes or until the apples are tender and the bread golden brown.

3-Pear Gratin Crisp

Makes 4 servings

Ingredients

5 ripe pears, peeled, cored and sliced

1/ 4 cup apricot preserves

1/ 4 cup dry white wine

1 tbs. unsalted butter, softened

1 cup macaroon cookie crumbs

3 tbs. unsalted butter, cut into small pieces

Directions

Preheat the oven to 400 °. Butter a 10 x 6 baking dish with 1 tablespoon butter. Arrange the pear slices in the baking dish. In a microwavable bowl, add the apricot preserves. Heat the preserves only until they are warm. Stir the wine into the preserves and pour the mixture over the pears. Sprinkle the macaroon cookie crumbs over the pears.

Dot the crumbs with 3 tablespoons butter pieces. Bake for 20-25 minutes or until the pears are tender and the crumbs golden brown. Remove the pan from the oven and cool for 10 minutes before serving.

You can substitute sugar cookie, vanilla wafers or any crunchy cookie for the macaroons if desired. The macaroon cookies add a distinct flavor.
