Fruits Cobbler

1-Orange Cobbler

Makes 6 servings

Ingredients

2 cups Bisquick

1/ 2 cup granulated sugar

1/ 2 tsp. ground nutmeg

1/ 4 cup plus 2 tbs. unsalted butter

3/ 4 cup orange marmalade

2 cups orange juice

2 tbs. cornstarch

Directions

Preheat the oven to 350 °. In a mixing bowl, add the Bisquick, 1/ 4 cup granulated sugar, nutmeg and 1/ 4 cup butter. Using your fingers, work the butter into the dry ingredients until you have coarse crumbs. You should still be able to see tiny pieces of the butter when done. Set the bowl aside for the moment.

In a sauce pan over medium low heat, add the orange marmalade, 1/ 4 cup granulated sugar, cornstarch and 1 1/ 2 cups orange juice. Stir constantly and cook until the mixture thickens and boils. This takes about 4 minutes on my stove. When the mixture is boiling, cook for 2 additional minutes. Remove the pan from the heat and stir in 2 tablespoons butter. Stir until the butter melts.

Pour the mixture into a 10″ round casserole dish. Add 1/ 2 cup orange juice to the biscuit mix. Stir until well combined and the dough is moistened. Drop the dough by tablespoonfuls onto the orange mixture. Bake for 25-30 minutes or until the cobbler is golden brown.

Remove the pan from the oven and cool for 10 minutes before serving. Serve with whipped cream or vanilla ice cream if desired.

2-Strawberry Cobbler

Makes 4 servings

Ingredients

1/ 3 cup plus 3 tbs. granulated sugar

2/ 3 cup water

1/ 2 tsp. vanilla extract

1 cup all purpose flour

1 1/ 2 tsp. baking powder

1/ 2 tsp. salt

1/ 4 cup unsalted butter

1/ 2 cup whole milk

1 pt. strawberries, hulled

Directions

Preheat the oven to 450 °. In a sauce pan over medium low heat, add 1/ 3 cup granulated sugar and the water. Bring the mixture to a boil. Reduce the heat to low and simmer for 5 minutes. Stir in the vanilla extract. Remove the pan from the heat.

Place the strawberries in a 1 1/ 2 quart casserole dish. Pour the hot sugar liquid over the strawberries. In a mixing bowl, add the all purpose flour, 2 tablespoons granulated sugar, baking powder and salt. Stir until well combined. Add the butter and work the butter into the dry ingredients until you have coarse crumbs. Add the milk and stir only until the dough is moistened. Spoon the dough over the hot strawberries. Sprinkle the remaining 1 tablespoon granulated sugar over the dough.

Bake for 25-30 minutes or until the dough is golden brown. Remove the pan from the oven and cool for 10 minutes before serving. Serve with whipped cream or vanilla ice cream if desired.

Note: I like this cobbler best if served cold. I prefer cold strawberries over hot strawberries. Serve it whichever way you like best.

3-Citrus Cobbler

Makes 6 servings

Ingredients

16 oz. can grapefruit sections

11 oz. can mandarin oranges

1/ 2 cup light brown sugar

1 cup plus 3 tbs. all purpose flour

7 tbs. unsalted butter

1 tbs. granulated sugar

1/ 4 tsp. salt

1 1/ 2 tsp. baking powder

1 egg, beaten

About 1/ 3 cup whole milk

Directions

Preheat the oven to 425 °. Place the grapefruit and mandarin oranges with their juices in a 8″ square pan. In a small bowl, add the brown sugar and 3 tablespoons all purpose flour. Sprinkle the mixture over the fruit in the pan. Cut up 3 tablespoons butter into small pieces. Place the butter pieces over the fruit. Do not stir when adding any of the ingredients. Bake for 15 minutes.

While the fruit is baking, make the crust. In a mixing bowl, add 1 cup all purpose flour, granulated sugar, baking powder, salt and 4 tablespoons butter. Using your fingers, work the butter into the dry ingredients until you have coarse crumbs. Place the egg in a 1/ 2 cup measuring cup. Add enough milk to make 1/ 2 cup. Add the milk and egg to the flour and butter. Stir only until the dough is moistened. Drop the dough by tablespoonfuls onto the cobbler after it has baked for 15 minutes. Bake the cobbler for 20-25 minutes or until the topping is done and golden brown. Remove the cobbler from the oven and cool for 10 minutes before serving.
