Apple Pie

1-Apple Pizza Pie

Makes a 15″ pizza pan pie

Ingredients

Pie dough for a 2 crust pie

8 apples, cored and sliced

1 1/ 2 tbs. lemon juice

1/ 3 cup plus 1/ 2 cup granulated sugar

1 tsp. ground cinnamon

1/ 4 tsp. ground nutmeg

3/ 4 cup all purpose flour

1/ 2 cup unsalted butter

Directions

Preheat the oven to 450 °. Cut out a 15″ circle from heavy duty aluminum foil. Roll the pie crust dough to fit the aluminum foil circle. Trim off the excess edges with a knife. Place the foil and pie crust on a large baking sheet or pizza pan.

Leave a 3/ 4″ edge on the pastry. To place the apple slices, place the apple slices 3/ 4″ from the edge and make a circle. The apples need to overlap each other a little bit. Continue placing the apples until the pizza is full. Sprinkle the lemon juice over the apples.

In a small bowl, add 1/ 3 cup granulated sugar, cinnamon and nutmeg. Stir until well combined. Sprinkle the sugar and spices over the apples. In a small bowl, add 1/ 2 cup granulated sugar, all purpose flour and butter. Using your fingers, work the butter into the flour and sugar until you have small crumbles. Sprinkle the crumbles over the apples.

Bake for 20-25 minutes or until the crust is browned and the apples tender. Remove the pie from the oven and let the pie rest for 10 minutes before serving. Serve warm with a scoop of vanilla ice cream on top of each slice or serve with a slice of cheddar cheese.

2-Walnut Maple Apple Pie

Makes a 9″ pie

Ingredients

9″ pie crust, prepared and unbaked

6 cups tart apples, peeled, cored and sliced

1/ 2 cup granulated sugar

3/ 4 cup gingersnap cookie crumbs

1 tbs. all purpose flour

1/ 2 tsp. ground cinnamon

Pinch of salt

1/ 4 cup unsalted butter, melted

1/ 4 cup chopped walnuts

1/ 3 cup maple syrup

Directions

Preheat the oven to 375 °. Place the pie crust in the pie pan. Trim and flute the edges if desired. Place half of the apples in the pie crust. In a mixing bowl, add the granulated sugar, gingersnap cookie crumbs, all purpose flour, cinnamon, salt and melted butter. Stir until well combined. Sprinkle half of the crumb mixture over the apples in the pie crust.

Place the remaining apples in the pie crust and sprinkle the layer of apples with the remaining crumbs. Sprinkle the walnuts over the top of the pie.

Bake for 20 minutes. Remove the pie from the oven and cover the pie with aluminum foil. Bake for 30 minutes. Remove the pie from the oven and drizzle the maple syrup over the pie.

3-Caramel Apple Pie

Makes a 9″ pie

Ingredients

Pie dough for 2 crust pie

8 cups tart apples, peeled, cored and sliced

1/ 4 cup granulated sugar

4 tbs. all purpose flour

1 tsp. ground cinnamon

1/ 4 tsp. salt

2 tbs. unsalted butter, melted

2 tbs. unsalted butter, softened

1/ 3 cup plus 1/ 4 cup dark corn syrup

1/ 4 cup light brown sugar

1/ 4 cup chopped pecans

Directions

Prepare half of the dough and roll the dough out to a 11″ circle. Place the crust in a pie pan. Trim the edges if desired. Preheat the oven to 425 °.

In a large mixing bowl, add the granulated sugar, 2 tablespoons all purpose flour, cinnamon, salt, 2 tablespoon melted butter and 1/ 3 cup dark corn syrup. Stir until well combined. Add the apples and toss to coat the apples with the mixture.

Roll out the remaining pie crust to a 12″ circle. Place the crust on top of the filling. Trim and flute the edges if desired. Cut 6 small 1″ slits in the top of the pie crust. Place the pie on a baking sheet to collect drips. Bake the pie for 35-40 minutes or until the crust is browned and the apples tender.

In a mixing bowl, add 2 tablespoons all purpose flour, 2 tablespoons softened butter, 1/ 4 cup dark corn syrup and 1/ 4 cup brown sugar. Stir until well mixed. Spread the mixture over the top of the pie crust. Sprinkle the pecans over the top of the mixture. Return the pie to the oven and bake for 5 minutes or until the topping is bubbly. Remove the pie from the oven and coolfor 20 minutes before serving.

Make sure you have the pie on a baking sheet when you add the topping. It will bubble off and make a mess otherwise.
